First stew of the season

I made a simple beef stew with a few different ingredients.  Based on a Vietnamese recipe, I began with a base of crushed annatto seed and oil, star anise and cinnamon. Thinking, hey.. I’d like some “bite” to this, I went for a Filipino angle and decided braising with some vinegar would be fun.  I’m a California gal so sourdough is in my blood.. and on my plate whenever I feel like dipping into gravy or soup.  Lucky me, I had a whole baguette of locally made sourdough!

What’s a stew without some fragrance.. that’s where fresh cilantro and Thai basil come in. Fresh herbs really make me happy.
