Sesame kale salad and Kimchi rice

Kale salad with simple sesame oil & red wine vinegar mix. Added quinoa, lentil and toasted sunflower seeds.

Brown rice and fresh kimchi. Layered on a few tablespoons of salmon roe! Salty fun bubbles!

I wasn’t feeling great because of our dinner the previous night. It was tasty and organic, but the sudden change of whole foods to prepared was too much. Overloaded with sodium and fat, I think.

To his credit, my husband cooked! Not me! The chicken was Pre-roasted, which I shredded, and he made a fresh avocado salsa.. or what he called “lazy guacamole”. Haha
