Turkey-Potato Hash

-Mashed potatoes: russets, buttermilk, plain yogurt, chopped sage/thyme/parsley, seeded mustard, freshly grated garlic, salt & pepper.
-Leftover turkey, shredded and sautéed in grapeseed oil. Fold into potato mixture
-Side salad of curly endive and shallots with home made blue cheese dressing
-poached egg on top
