Vegan Jook Breakfast!

Brown rice leftovers don’t have to be boring! Transform your leftovers with water into Jook! Slow cook 1:3 ratio of water and simmer until all grains are broken and mushy. It’s good to have an enamel coated cast iron pot so the jook doesn’t burn. Keep stirring until the rice “films” over and add water to thin to a nice smooth consistency.

Slice scallions, mustard greens, pickled mustard root, chopped peanuts and fresh raw ginger.
Stir into Jook and enjoy!
