Last night’s salad turns into a creamy version for today’s lunch. I added 1/2 cup fat free yogurt and 1/8 cup seeded mustard and mixed everything together. Steamed the tortillas and in added arugula. This took me a little under 15 minutes to make. While the tortillas steamed, I made a quick pico de gallo from 3 tomatoes, left over red onions, some chilies and spices.
This meal was quick and full of flavor. Now, my belly is full so I won’t over-buy at the farmers market!
