Already out the door and at my morning acupuncture appointment!

I made extra lunch for my hubby using leftover chicken. I deboned the legs and thighs and shredded the meat. Kohlrabi, carrot, daikon, arugula, tomato and fresh mint and Thai basil with dressing. Dressing is lime juice, fish sauce, Thai chilies, a dash of water, palm sugar and salt.

I sort of want to eat mine now, but I forgot a fork! 😉
