Friday.lunch

Boil beets in water. Get random veggies out of the fridge. Chop chop chop. Garnish with fresh herbs and enjoy the fantastic flavors meld when returning the cool beet liquid! Serve room temp or chilled.

I had a medley of crunch, medium, and soft; red bell pepper/red onion, beet, avocado!

Since I’m not on my cleanse, I can add a dollop of tzatziki to my soup! Either way, it is delicious!
