Two of these for lunch and all is right in the world!

35 minutes cooking time, 5 assembling.
Steamed the tortillas over boiling water. Boiled 1/4 cup lentils for 25 min until tender. Strained water and added 1 chopped scallion, 1/2 jalepeño, tbsp cumin, 1/2 tbsp chili powder (oh I like spice!), 1 tsp oregano, a dash of sea salt, juice of 1 lime, 1/2 avocado. Turned burner back on low and cooked spices into lentils. Assemble tortilla, add 1/3 cup seasoned lentils, garnish with sliced red onion and a handful of garden cilantro. Tie closed with chive leaf. 😉 serve with fresh salsa, lime wedges or a little yogurt.  No sour cream needed!
