I really felt like some spicy food tonight. Made a cauliflower, fennel and baby pea vindaloo with brown rice. Also made a coconut lentil spiced soup! Seriously delicious. I gave my husband’s serving a nice dollop of yogurt!
These dishes were made with homemade chicken broth and not water, so everything tasted a little more rich in flavor. At some point I’m going to perfect a vegetable broth. 🙂
