The beauty of buying an entire chicken is that you can eat it for days. That’s also a downfall if you have a creative recipe block. Thankfully, I have like 50 cookbooks ;P
I used up the final parts of chicken today: the legs, thighs, wings and drumettes. Today’s heat made me think of grilling, but that’s a no-no. I then thought of hot-wings. Yup. I’m a sucker for hot wings. But tonight’s take was steam n bake! Not fry n fry.
Steamed all chicken pieces for 45min. Coated them in a mixture of fresh ground chili, ginger and spiced with coconut milk. Let it sit in the fridge for 30min or so. Steamed bak choy, made brown rice and cucumber salad.
Bake the chicken until the coating sets, then finish by broiling just until it begins to bubble.
